Cooking hours: the pastries are ready from 7:30 every morning!

 

The loaves meanwhile, are ready around 11 am, as they come out depending on the maturity of the leaven and the weather (We do not use an oven, all mature quietly at its own pace!)

 

At our bakery of Des Pains et des Roses, we use as much as possible local organic flours such as Khorasan (kamut), Spelled, Red Five, roasted corn ... or from sustainable agriculture. I also use a natural sourdough based on fruit and where yeast is present in very small quantities. Hand and time do the rest ...

 

I will look for the best ingredients according to their sector of origin, because I believe that the mixing of food is a great wealth. In this sense, I use Sultana grapes from Iran, currants from Greece, Marsel sea salt without additives, natural almond powder, extra virgin olive oil etc ...
